the very first vegan adventure!!!
on the menu: pumpkin and spinach lasagna + kumara chips

the entire meal was amazing, but photos simply did not do the lasagna justice. the kumara chips however... mmmmm. kumara chips are so easy to cook, take no time at all and they're a healthy alternative to other snacks!

we used three different types of kumara: red, gold and orange!!!!

kumara circles
(for three servings)

three kumara (washed)
2 tbsp olive oil
garlic salt to season

preheat oven to 180ºC. cut kumara up into small pieces about 1cm thick. we did ours in circles!
toss with olive oil and garlic salt to season. bake on an oven tray lined with baking paper, until golden and tender. 

if you haven't tried kumara chips, it's time to jump on the bandwagon!

(the more i look at this, the more i'm craving it again so here's a photo of our lasagna anyway! 
that shaved potato top. so satisfying).
